They come from the Arousa estuary, specifically from the O Grove area.
Their favourable location, along with the unbeatable climatic conditions and the purity of the waters have made these estuaries unique and of indisputable gastronomic value.
We buy in season, at their optimum ageing point, when the mussels meet the strict quality standards we demand in order to offer a top quality product with extraordinary flavour.
The production process is artisanal. Following careful selection, they are fried in olive oil in order to seal them and their byssus is removed (the threads they cling to the trough with) manually. They are packaged one by one and a smooth marinade made with a traditional Galician recipe is added.
